Lydia has Steel armour by default, and it's not unequipable without using cheats (console commands) or mods. You can however, give her armour or clothing that is better than Steel armour...whether that be through enchantments that give significant buffs, or through a better armour rating.Basically, as the game clearly tells you, achievements are disabled when you use console commands. You could just reload a prior save and NOT use the console command, then fast travel to get Lydia to come back, and move on. But of course you wont' have a prior save. No one ever does.
